- Pierce skin of sweet potatoes in several spots with a fork.
- Cook sweet potatoes in microwave oven until just tender, 12 to 15 minutes. Refrigerate sweet potatoes until cooled completely, at least 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Prepare a shallow 1 1/2-quart baking dish with cooking spray.

- Heat the oven to 400°F Lightly butter a large Pyrex or ceramic baking dish that can hold the sweet potato wedges in one layer.
- In a small saucepan, melt the butter. Whisk in the honey, orange juice, and spices. Put the sweet potatoes in the buttered baking dish, add the honey mixture, and toss the pieces well to coat them thoroughly. Arrange the sweet potatoes in a single layer; sprinkle with salt and pepper.
- Roast until the potatoes are browned and tender and the juices are bubbly and thickened, 45 to 55 minutes. To ensure even roasting, stir and baste several times with the pan juices, doing so more frequently toward the end of roasting. Serve at once.
MIMI'S SWEET POTATOES IN ORANGE CUPS
My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. - Preheat the oven to 425°F/220°C.
- Place the orange juice in a saucepan with the sugar and vinegar. Bring to a boil over high heat, then turn down the heat to medium-high and simmer fairly rapidly for about 20 minutes, until the liquid has thickened and reduced to scant 1 cup/200 ml (about the amount in a large glass of wine). Add the bitters, olive oil, and 1 1/2 teaspoons salt.
- Place the potatoes in a large bowl, add the chiles, sage, thyme, and garlic, and then pour in the reduced sauce. Toss well so that everything is coated and then spread the mixture out in a single layer on a baking sheet on which it fits snugly, about 12 by 16 inches/30 by 40 cm.
- Place in the oven and roast for 50 to 60 minutes, turning and basting the potatoes every 15 minutes or so. They need to remain coated in the liquid in order to caramelize, so add more orange juice if the pan is drying out. At the end, the potatoes should be dark and sticky. Remove from the oven and leave to cool slightly before arranging on a platter and dotting with the goat cheese. Serve warm or at room temperature.

- Bake potatoes on a cookie sheet until soft (approx. 1.5 hrs).

- Heat oven to 400°F.
- Peel and slice potatoes about 1 inch thick. Arrange in lightly greased 1 1/2 quart casserole dish.
- In small saucepan, stir together sugar, cornstarch, salt and orange peel.
- Slowly stir orange juice into the sugar mixture.
- Add butter. Cook stirring constantly until mixture boils and thickens. Boil and stir about 1 minute.
- Pour hot orange sauce over sweet potatoes. Cover and bake 1 hour, basting occasionally.

- In a large saucepan cook the cubed sweet potatoes or yams in boiling water until very tender. Drain.
- Put the sweet potatoes into a large mixing bowl and beat with an electric beater until smooth.
- Add the eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon and beat until everything is well blended.
- Add 1/4 cup of the orange juice and beat again. If the mixture is not moist and fluffy, add up to 1/4 cup more orange juice.
- Lightly butter a souffle or casserole dish and add the beaten sweet potato mixture.
- Arrange the pecan halves on top.
- Sprinkle the 1/2 cup brown sugar and the remaining 1/4 cup melted butter on top.
- Bake 375 degrees for about 30 minutes or until hot.
