Olive and Blue Cheese Spread image

This is a spreadable version of the cheese ball my mother makes for the holidays. I added more olives and the olive brine which gives it a wonderful olive-y flavor and makes a smooth and tasty spread for crackers or a dip for pretzels. NOTE: to toast walnuts: spread in a baking sheet and bake at 350 degrees F. for 15-17 minutes, stirring often to prevent burning. Walnuts are toasted when they give off an aromatic, toasty aroma.
