2 c raw grated sweet potatoes
1 c sugar
1 c half and half
1/4 c butter, melted
1/2 tsp cinnamon
1/4 tsp cloves ground
1/4 tsp allspice
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp lemon flavoring
2 eggs
flour to make thick

Steps:

  • 1. Peel and grate raw sweet potatoes enough to make 2 cups. I used one large sweet potatoe and it made more than 2 cups so peel and grate measure first before continue to peel potatoes.
  • 2. Place in a mixing bowl and add all the dry ingredients in.
  • 3. Beat the eggs and add to the mixture.
  • 4. Blend in the milk and beat together all the mixture at this point. Add about 1 tsp of flour just enough to make thick.
  • 5. Pour into a greased casserole dish about 9x8 or round 2 quart dish.
  • 6. In a preheated 350 degree oven bake for one hour. Or keep checking for tenderness and pudding like you may be able to take out sooner depending on the potatoe used.
