Old Folks Chili image

This is a combination of recipes that I put together tonight. The better half said it was great! Less beans, more meat!

Number Of Ingredients 13

2 1/2 lb ground beef (i used ground round)
1 lb medium pork sausage (i used old folks)
1/2 green pepper
1/2 red pepper
1/2 yellow onion
22 oz tomato sauce (i used red gold)
15 oz kidney beans, drained & rinsed (i used red gold)
15 oz diced tomatoes (i used red gold)
4 oz tomato paste (i used hunts
1 c water
ground cumin, to taste
mexene chili powder, to taste
salt & pepper, to taste

Steps:

  • 1. Place the ground beef, sausage, peppers and onions in a large cast iron pot over medium-high heat. Cook, stirring to crumble, until evenly browned and vegetables are soft. Drain off grease. Add back to pot, add kidney beans, diced tomatoes, sauce & paste and the cup of water. Stir for a few minutes to combine. Stir in cumin, chili powder & salt & pepper to taste. Simmer over low heat for 40 minutes uncovered.
