New Mexican Chocolate Crinkles image

I like these cookies because they are rolled in a mocha cinnamon sugar mixture. However, if you are not a fan of coffee you can just omit it and use regular cinnamon sugar instead.

1 cup(s) plus 6 tbsp all-purpose flour
1 1/4 teaspoon(s) baking powder
1 teaspoon(s) cinnamon
5 tablespoon(s) butter or margarine
1 cup(s) brown sugar, packed
2 - eggs
1 teaspoon(s) vanilla
3 - squares unsweetened chocolate, melted
1/4 cup(s) granulated sugar
1/2 teaspoon(s) cinnamon
1/2 - to 1 tsp instant coffee (optional)

Steps:

  • Combine flour, baking powder, and cinnamon. In a separate bowl, beat the brown sugar and butter together until creamy. Beat in the eggs and blend.
  • Add vanilla and chocolate. Mix evenly. Gradually add the flour mixture to the chocolate mixture. Form into a soft dough.
  • Chill until the dough can be handled. Shape dough into 1 inch balls. Roll balls in remaining sugar, cinnamon, and coffee.
  • Place cookies on a greased cookie sheet. Bake for 12 minutes at 350 degrees. Cool cookies for a minute on sheet before transferring to a rack to cool.
