Original Mississippi Mud Pie image

This is the best Mud Pie recipe I've ever used.

Number Of Ingredients 12

1 cup Butter
8 oz Semi-Sweet Chocolate, coarsly chopped
1/2 cup Corn Syrup
4 large Eggs, beaten
1/2 cup Pecans, finely chopped
Whipped Cream, to serve
CRUMB CRUST
5 to 6 oz Graham Crackers
1/2 cup Pecans, finely chopped
1 Tbsp Light Brown Sugar
1/2 tsp ground Cinnamon
6 Tbsp Butter, melted

Steps:

  • Preheat the oven to 350 degrees. Lightly grease 9in springform pan.
  • To make the crust, place graham crackers, pecans, sugar and cinnamon in food processor. Process only until fine crumbs are formed. Add the butter and process just until moisntened - DO NOT OVERPROCESS!
  • Press the cracker mixture over the bottom and about 1 1/2 inches up the side of the pan. Cover and chill until filling is ready.
  • To prepare the filling, put the butter, chocolate, corn syrup into a pan over low heat until melted and blended. Let cool, then beat in the eggs and pecans.
  • Pour filling into chilled crust, and smooth the surface. Bake for 30 minutes, or until just set but still soft in center. Let cool on a wire rack.
  • Serve at room temperature or chilled with whipped cream.
