NANCY'S - ULTIMATE DOUBLE BANANA BREAD image

A friend gave me 1/2 a bushel of bananas...and I believe in "Waste Not, Want Not". SOOO, here is my entry in to your banana bread recipe collections. Plus ..I have a freezer full of frozen bananas with the skin on ,for future baking! This is a delicious bread, moist and not to sweet. no frosting but....bursting with banana flavor! My friends loved it at our coffee gathering! along with some fresh fruits, cantalope, grapes and watermelon served on the side. I do hope you enjoy my recipe........Nncy...9/17/12

Number Of Ingredients 10

1 cup(s) sugar
1/2 cup(s) butter...softened
2 - eggs, beaten
1 teaspoon(s) baking soda
1 teaspoon(s) salt
1-1/2 teaspoon(s) banana flavoring
2 cup(s) mashed very ripe bananas...or peeled mushy, blackened, frozen bananas.
1/2 cup(s) buttermilk
2-1/2 cup(s) white flour
- nuts added ? your choice... if desired.

Steps:

  • Pre-heat oven to 350 degrees. Grease and flour 2 regular bread pans. In a large bowl, mix sugar and butter together.
  • ADD eggs, bananas, buttermilk and banana flavoring to the sugar butter mixture. Beat with an electric mixer till smooth. ***Stir in salt and baking soda..to the above mixture.
  • Pour batter into the prepared pans. Bake 8 inch pans for 1 hour. Bake 9 inch pans 1- 1.4 hours. Insert a toothpick into the center.. if it comes out clean...you loaf is done. ( I use a wooden chop stick, the pointed end.)
  • Cool 10 minutes in the pan, Loosen the sides of your bread in the pans, then remove and turn out onto a wire rack to cool. Cool before slicing.
  • Now please enjoy your bread... and later it is great toasted,and buttered....YUM! Picture of bananas in the freezer...for now....LOL
