1 c of butter, softened
1 1/2 c sugar
4 eggs
1 c buttermilk, room temp
2 tsp vanilla extract
8 ripe bananas, mashed
4 1/4 c flour
1 tsp kosher salt
1 tsp baking soda
2 tsp baking powder
1/2 tsp cinnamon

Steps:

  • Preheat the oven to 325
  • Beat the butter and sugar together until light and creamy
  • Add in the eggs, one at a time, blend well
  • Stir in the buttermilk, vanilla and mashed banana
  • In a separate bowl sift together the flour, salt, baking powder, baking soda and cinnamon
  • Add the dry ingredients to the wet ingredients and stir to combine (low speed or use a spoon until just combined)
  • Grab two loaf pans
  • Line them with parchment paper (alternatively you can butter and flour your loaf pans)
  • Pour an even amount in to each pan
  • Bake for 65-75 minutes, turn the pans 180 degrees in the oven half way through cooking (so turn once the first 35 minutes have passed)
  • Use a toothpick to check for doneness, center should come out clean, if it is still gooey continue cooking in 5 minute increments
  • Remove from the oven, rest 10 minutes, transfer to a wire rack to cool
  • Serve with butter, while the banana bread is still warm!

A friend gave me 1/2 a bushel of bananas...and I believe in "Waste Not, Want Not". SOOO, here is my entry in to your banana bread recipe collections. Plus ..I have a freezer full of frozen bananas with the skin on ,for future baking! This is a delicious bread, moist and not to sweet. no frosting but....bursting with banana flavor! My friends loved it at our coffee gathering! along with some fresh fruits, cantalope, grapes and watermelon served on the side. I do hope you enjoy my recipe........Nncy...9/17/12

1/2 cup(s) butter...softened

2 cup(s) mashed very ripe bananas...or peeled mushy, blackened, frozen bananas.
1/2 cup(s) buttermilk
2-1/2 cup(s) white flour
- nuts added ? your choice... if desired.

Steps:

  • Pre-heat oven to 350 degrees. Grease and flour 2 regular bread pans. In a large bowl, mix sugar and butter together.
  • ADD eggs, bananas, buttermilk and banana flavoring to the sugar butter mixture. Beat with an electric mixer till smooth. ***Stir in salt and baking soda..to the above mixture.
  • Pour batter into the prepared pans. Bake 8 inch pans for 1 hour. Bake 9 inch pans 1- 1.4 hours. Insert a toothpick into the center.. if it comes out clean...you loaf is done. ( I use a wooden chop stick, the pointed end.)
  • Cool 10 minutes in the pan, Loosen the sides of your bread in the pans, then remove and turn out onto a wire rack to cool. Cool before slicing.
  • Now please enjoy your bread... and later it is great toasted,and buttered....YUM! Picture of bananas in the freezer...for now....LOL

This is just a really good and hearty banana bread. If you're not a nut person just omit them, you can also add a few raisins if you'd like. I like it right after its made, drenched in whipped butter. It's so yummy.

2 teaspoons baking soda
½ teaspoon salt
10 bananas, mashed
¾ cup butter, softened
1 cup brown sugar
3 eggs, beaten
¾ cup walnut halves or pieces
¼ cup pecan halves or pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease three 8x4 inch loaf pans.
  • In a large bowl, stir together flour, baking soda and salt. In a separate bowl, beat together bananas, butter, brown sugar and eggs. Stir banana mixture into flour mixture, just until combined. Fold in nuts. Pour batter into prepared pans.
  • Bake in preheated oven for 30 to 45 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let bread rest in pans for 10 minutes, ten remove loaves from pans and allow to cool on a wire rack.

2/3 cup sugar
2 large eggs, room temperature
1 cup mashed ripe banana

1 cup whole-berry cranberry sauce
3/4 cup chopped pecans, divided
1/2 cup dried cranberries

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and crumbly. Beat in eggs, banana and vanilla. I don't know who Nancy is, but I have been making this banana bread for about 20 years! I think I got it out of an old cookbook, but it is a super moist banana bread. The key is using bananas that are turning black.

3 bananas, overripe
1/2 cup sugar
1/2 cup butter
1 egg
1 1/2 cups flour
1 teaspoon baking soda
salt

Steps:

  • Mash bananas in a large bowl.
  • Add sugar and mix well.
  • Cut in butter.
  • Add egg and beat slightly.
  • In a separate bowl, mix together flour, baking soda and a dash of salt.
  • Gradually add to banana mixture.
  • Pour into a well-greased loaf pan.
  • Bake in a preheated 350 oven for 45-55 minutes.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. 3 teaspoons plus 3 cups sugar, divided
1 cup butter, softened
6 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)

1 stick unsalted butter
1 cup light brown sugar, plus more as needed
1 large egg
2 cups ripe banana, (about 4 large bananas)
½ cup full fat sour cream
2 teaspoons vanilla extract
1 ½ cups all purpose flour
1 teaspoon kosher salt
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ cup dark chocolate chunk
1 tablespoon turbinado sugar

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 9 x 5-inch loaf pan with nonstick cooking spray. Line the pan with parchment paper, leaving some overhang on the long sides so it will be easy to lift out the bread, and spray again.
  • Add the butter to a medium nonstick pan over medium heat. Cook, stirring occasionally, until the butter turns amber brown and smells nutty, about 3-4 minutes. Watch carefully so the butter does not burn. Remove the pan from the heat and set aside to cool for 10-15 minutes.
