MUSSELS WITH CHORIZO, TOMATO AND WINE image

Number Of Ingredients 12

8 ounces chorizo sausage, casings removed & chopped
3 tablespoons unsalted butter
1 yellow onion, finely chopped
1 shallot, finely chopped
1/2 teaspoon fennel seeds
1/2 teaspoon pepper
3 garlic cloves, minced
7 roma tomatoes, peeled, seeded and chopped
3/4 cup white wine
1/2 cup heavy cream (divided into 2 1/4 cups)
2 tablespoons finely chopped parsley
4 pounds fresh mussels, scrubbed and debearded

Steps:

  • In large pan saute chorizo until brown, about 4 minutes. Remove with a slotted spoon and drain on paper towels. Drain off all but 1 tablespoon of fat from pan Add butter and when melted, add onions, shallots, fennel seeds and pepper; saute until tender Add garlic and tomatoes; cook, stirring for 2 minutes Add mussels Add wine, 1/4 cup cream and parsley; bring to boil. Stir mussels, cover and cook until shells have opened, about 6-8 minutes Remove mussels to separate bowl(s) Bring juice to boil in pan and boil 3 minutes Add sausage and 1/4 cup cream and boil for 1 minute Pour juice over mussels
