Mushrooms and Wild Rice image

When we lived in northern Wisconsin, we had easy access to wild rice. I still have some and thought I'd try this combo of ingredients. We like wild rice with chicken dishes.

1/2 cup(s) wild rice, uncooked
1 cup(s) chicken broth
1/2 cup(s) onions, chopped
1 clove(s) garlic
8 ounce(s) sliced portabello mushrooms (mini-bellas)
1/2 cup(s) roasted red pepper, cut into strips
1 tablespoon(s) fresh parsley, minced
1 teaspoon(s) dijon mustard - whole grain or regular
- salt and pepper, to taste
- sesame seeds, for garnish

Steps:

  • Rinse and drain wild rice. Bring to boil in the chicken broth and simmer, covered, until liquid is absorbed. About 1/2 hour.
  • When rice is almost done, heat olive oil in skillet, sauté onion until starting to turn translucent. Add garlic and mushrooms. Continue to sauté until mushrooms have released liquid.
  • Add red pepper strips, wild rice, seasonings. Stir together until hot. Stir in parsley. Sprinkle sesame seeds on top of each serving.
