Hearty Potato and Sausage Bake image

Approached by one of the young'uns in my church for a fundraiser, I picked through the website (they do that now!), and found this cute little Dump 3 Books in 1 cookbook. Number Of Ingredients 11

1-1/2 lb red potatoes, cut into bite-size chunks
2 onions, sliced
1 lb carrots, cut into 3" chunks, or large coins, as appropriate to being bite-sized
2 Tbsp butter, melted
2 tsp mama's meatball mix (or other favorite italian mix herbs)
1 tsp salt
1 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp black pepper
1 lb favorite brats, polish sausage, or other favorite product
garlic mist nonstick cooking spray

Steps:

  • 1. Preheat oven to 400°F. Spray 9 x 13 baking dish with garlic mist nonstick cooking spray.
  • 2. Combine potatoes, onion, carrots, butter, salt, Mama's Meatball seasoning, salt, garlic powder, thyme, and pepper in prepared baking dish; toss to coat. Bake 30 minutes.
  • 3. While vegetables are baking, prepare the sausage in your preferred manner. Once cooked through, slice into 1/4: slices.
  • 4. Add sausage to the vegetables; mix well. Bake 15 - 20 minutes, or until potatoes are tender and golden brown.
