MUSHROOM SOUP WITH HAM image

Number Of Ingredients 12

1 ham bone
2 quarts water
2 stalks celery
1 large onion, quartered
1 bay leaf
1 can condensed Cream of Mushroom soup
1 cup uncooked rice
Salt and pepper
1/2 pound mushrooms, sliced
2 tablespoons butter
1 tablespoon minced parsley
2 teaspoons prepared mustard

Steps:

  • Place ham bone in large pan and cover with water. Add celery, onion and bay leaf. Cover and simmer for 2 hours. Strain. Skim broth. Stir in Mushroom Soup, rice, salt and pepper. Bring to a boil. Stir. Cover and simmer for 20 minutes. Meanwhile, saute mushrooms in butter. Add to broth with minced parsley and mustard. Blend well.
