Mom's Meatloaf image

I love meatloaf, but not the day it's cooked. I love cold meatloaf sandwiches. :-) I ate many of these in my lifetime!!

Number Of Ingredients 9

2 lb ground beef (bottom round preferred)
2 c corn flakes (or bread crumbs)
1 egg-beaten
1 c tomato soup (or tomato juice)
1 tsp salt
1/4 tsp pepper
1 c boiling water
4 slice bacon
***PREHEAT OVEN TO 350 DEGREES***

Steps:

  • 1. In a large bowl, combine the beef, corn flakes (or bread crumbs) and beaten egg. Add the tomato soup (or juice) and seasonings. Mix thoroughly. Pack firmly into a loaf pan to shape the meatloaf. Turn the meatloaf out into a small roasting pan. Pour the boiling water over the meatloaf. Place the 4 slices of bacon across the top of the meatloaf. Bake at 350* for 30 to 35 minutes.
