Steps:
- 1. Cut all stems off cauliflower and boil for 30 minutes 2. Drain and transfer bowl 3. Mash cauliflower down thoroughly with fork until it has the consistency (or texture) of mashed potatoes 4. Put cauliflower in oven-safe dish 5. Add shredded cheddar cheese and mix 6. Bake in preheated oven for 5 minutes at 350 7. Remove and let cool for 5 minutes 8. Add sour cream 9. Add Parmesan - try adding parsley, oregano, and/or basil
