Mississippi Mud image

Although it is "mud" there is no chocolate in this recipe. It is a very refreshing summertime dish, although I serve it year round. It takes a little time to put together but it is well worth it.

Number Of Ingredients 10

2 cup(s) walnuts, chopped & divided
1 cup(s) all purpose flour
1 stick(s) butter, melted
1 cup(s) confectioners' sugar
1-8 oz - cream cheese, room temperature
2-3oz package(s) vanilla pudding, cook kind
1-12 oz - cool whip, thawed
3 - 4 - bananas, sliced
- coconut
- maraschino cherries

Steps:

  • Cook the pudding. Let cool.
  • Preheat oven to 400. Mix together the flour, 1 cup nuts and the butter. Press into a greased 13 x 9 pan. Bake for 15 minutes. Let cool.
  • After the crust and pudding are cool. Mix together the cream cheese and confectioners sugar, then fold in 1/2 of the cool whip. Spread on cooled crust.
  • Spread the cooled pudding onto the cream cheese layer. Place the sliced bananas on the pudding, lightly pressing them into it.
  • Spread the remaining cool whip over the pudding.
  • Put the coconut, remaining nuts & the cherries on top of the cool whip. Let set at least 4 hours or overnight.
  • Enjoy!
