MIDDLE EASTERN ORANGE CAKE image

2 small oranges
6 eggs
1 yep vanilla extract
Juice of half a lemon
Couple of drops of white vinegar
250g almond flour (2.25 cups)
250g sugar (1.25 cups)
1.5 tsp baking powder

Steps:

  • - Heat oven to 375 F. - Put oranges in a small pot. Add water to barely cover the oranges. Birng to boil, cover, reduce the heat and simmer for 2 hours. Discard water and leave oranges to cool down. - Put 6 eggs in a blender with lemon juice and vinegar and blend well. Cut oranges into small pieces and discard the pips. put in a blender with eggs and puree well. - In a bowl, add almond flour, sugar and baking powder and mix well. - Pour in the egg-orange mixture and mix well. - line the bottom and edges of a 9" springform pan with parchment paper and spray with non-stick oil. - Pour in the cake mixture and bake for 1 hr. The top should be golden brown, and a toothpick comes out clean when inserted.
