I think that microwaves first came out in the late 70's or early 80's. I was one of the lucky ones to get one back then. This was my favorite recipe from my cookbook that came with my new microwave. My family loved it and I've tweaked it thru out the years. Most of the tweaks are simple but include changing the original recipe...

Steps:
- 1. Place beef and garlic in 2 quart casserole.
- 2. Cook, covered on full power 4 to 5 1/2 minutes. Stir 1/2 way through time. Drain.
- 3. Add next 8 ingredients. Cook covered full power 6 to 8 minutes until boiling. Stir 1/2 way.
- 4. Blend ricotta and cottage cheese (if using), 1/2 cup Parmesan, egg, and parsley in small bowl.
- 5. Layer 1/2 of noodles in 2 quart dish. Spread 1/2 of cheese mixture, 1/2 mozzarella, and 1/2 meat sauce.
- 6. Repeat layers.
- 7. Cover loosely with saran wrap.
- 8. Heat full power 13 to 16 minutes.
- 9. Sprinkle top generously with Parmesan.
- 10. NOTE: This freezes well. I usually double the recipe and freeze some.
