MEXICAN CORN CASSEROLE image

Number Of Ingredients 7

2 cups chicken stock
1 cup cornmeal
2 cups corn kernals
1 tbsp olive oil
1 tsp vegeta
19 ounces salsa (your choice of spiciness)
1 cup grated cheese (sharp cheddar preferably)

Steps:

  • Bring chicken stock to a boil and add cornmeal, corn kernals, olive oil and vegeta. Cook and stir until thickened. Spoon half of the mixture into a pie or flan dish. Cover with half of the salsa and all of the grated cheese Spoon other half of the corn mixture into dish. Spread remaining salsa on top of mixture. Bake in 350 degree oven for 30 minutes
