Melon Seed Drink (Horchata) image

The essence of melon flavor. I make this rather than Kool-Aid for kids. They always want to know where I got it. I use canteloupe more often than not. From The Complete Book of Mexican Cooking by Elizabeth Lambert Ortiz

Number Of Ingredients 4

1 cup melon seeds
1 cup sugar or 1 cup equal amount Splenda sugar substitute
1 lime, rind of, grated
6 cups water

Steps:

  • Place the melon seeds in a blender and pulverize as finely as possible.
  • Combine the pulp, sugar, lime rinds and water in a large jug or bowl.
  • Let sit for 4 hours.
  • Strain through a cloth extracting all liquid possible.
  • Drink and enjoy.
