Meatloaf with a Tomato Beef Sauce image

MEATLOAF
1 lb chopped meat
2 eggs
1 medium onion, finely chopped
1 Tbsp chopped parsley
1 tsp salt
1/4 tsp pepper
1/3 c oatmeal
1/2 - 1 c italian bread crumbs
1/2 c finely shredded carrots
1/2 c finely shredded celery
3 Tbsp ketchup
SAUCE
1/3 c ketchup
1 can(s) beef consomme' soup
1/2 tsp dried basil
1 Tbsp corn starch
several drops of frank's red hot sauce or tabasco hot sauce (optional)

Steps:

  • 1. Mix all meatloaf ingredients together. Shape into loaf and bake at 350 degrees for 1 hour.
  • 2. For the sauce, mix ketchup and corn starch together. Then stir in remaining ingredients.
  • 3. In microwave safe measuring cup, microwave for 3 minutes. Stir.
  • 4. Pour sauce over meatloaf after it has baked for 1 hour. Bake for another 1/2 hour.
