MARINATED CUKES AND ONIONS image

I used to not care for these growing up, as Mom didn't put any dairy in them. Well, 45 years later, while working @ an assisted living home, the cook found this in an old cookbook and made them up. Thank you Nita. I was skeptical, but tried them and they were the bomb. Happy Cookin'

Number Of Ingredients 8

3/4 c sugar
1 tsp salt
dash(es) pepper
2/3 c apple cider vinegar (white will work, too)
1/4 c water
1 1/2 c mayonnaise or miracle whip
2-3 cucumbers, peeled, sliced in coins
1-2 sweet, red, yellow or white onions, sliced into rings or 1/2 rings

Steps:

  • 1. Mix all ingredients, except veggies, with a whip until smooth. Add veggies at this point. Keep refrigerated. Add more veggies as needed.
  • 2. Use your imagination...zucchini, radishes, don't just use what I've posted. Use what's in your garden or your local farmer's market. Happy Cookin'
