BALSAMIC ROASTED TOMATO SAUCE image

Yield 5 cups

Number Of Ingredients 8

2 1/2 pounds tomatoes, cored
3/4 c olive oil
1/4 c balsamic vinegar
1/2 c sliced shallots
6 cloves garlic, sliced
1/4 c chopped fresh oregano
1 t kosher salt
pepper

Steps:

  • Toss together all ingredients and put in roasting pan. Roast at 400, about 1 hour until tomatoes are blackened. Whirl in food processor until well blended.
