MAPLE GLAZED BRUSSEL SPROUTS image

1 1/2 lb brussel sprouts
1/4 c finely minced shallots
1/4 c maple syrup
1 T dijon
1 T tamari
1 T arrowroot powder
Finely diced red bell pepper
chopped walnuts or pecans

Steps:

  • Bring sauce pan of water to boil. Cut the stems off the sprouts and discard, then cut the sprouts in half. Cook for 2 minutes;drain. Rinse well with cold water. In heavy nonstick pan state the shallots 2-3 minutes. Add the boiled sprouts and sauté for 4 more minutes. Whisk together the syrup, dijon,tamari, and arrowroot powder in small bowl. Pour the mixture over the sprouts and cook for 2 minutes til sauce thickens. Garnish with pepper or nuts if desired.
