I picked up this recipe at a farmers' market stall selling Ontario maple syrup. It's from the Ontario Maple Syrup Producers Association and I've made this cake/pie several times for family and church pot lucks. It always turns out deliciously. 5 large cooking apples, peeled and sliced
1/2 c pure maple syrup
2 Tbsp butter or margarine
2 eggs
1 c white sugar
1/2 c butter
1 tsp pure vanilla extract
1 tsp baking powder
1/2 tsp salt
1 c all purpose flour
1 c whipping cream
1/4 c pure maple syrup

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Grease a 10-inch pie dish (I prefer Pyrex glass dish).
  • 3. Spread apples evenly in dish. Sprinkle with maple syrup and dot with 2 tbsp. butter.
  • 4. In a medium bowl, beat eggs, sugar, butter and vanilla together until fluffy.
  • 5. Add baking powder, salt and flour until blended.
  • 6. Spread batter over apples and bake for 45 minutes or until apples are tender. Cool slightly.
  • 7. Whip cream, drizzle maple syrup over top and fold in gently.
  • 8. Serve cake warm and top with the maple whipped cream.
