Steps:
- In a medium bowl, combine apple, chicken, cherries, celery, pecans, and mandarin oranges. Stir gently to combine. Slice oranges in half (stem end at the top), and scoop out pulp. (Tip: include the freshly juiced pulp as a healthy alternative to soda or sugary juices). If necessary, slice a small sliver off the bottom of each orange cup so that is sits more evenly. Combine the mandarin orange syrup, honey, and mayonnaise in a small bowl. Toss with the chicken mixture to coat well. Divide the chicken mixture evenly into the 4 orange cups. Pack in a cooler or with an ice pack to maintain temperature.
