Luscious Lemond Pound Cake image

In Florida we have "Meyer lemons" that are larger than grapefruit!! You only need one to make a lemon pie or this wonderful pound cake. I'm lucky that my husband is a great gardener and makes sure I have lemons for cooking and baking

Number Of Ingredients 6

1 box(es) lemon cake mix (i use duncan hines moist supreme mix)
1 package(s) instant lemon pudding mix
4 large eggs
1 cup(s) fresh lemon juice (ifyou don't have enough, add water to equate
2 teaspoon(s) lemon zest, grated
1/2 cup(s) vegetable oil

Steps:

  • Preheat oven to 350 degrees. Grease and flour 10" bundt pan
  • Combine all cake ingredients in a mixing bowl. Beat at medium speed 2 minutes. Pour into prepared pan. Bake at 350 Degrees 50-60 minutes or until tests done. Cool on rack
  • Prepare a simple glaze-Use lemon zest and lemon juice-add confectioners sugar to achieve proper thickness, adding milk or more lemon juice to thin. Pour over cake and let set
