MY DAUGHTER MADE A VERSION OF THIS DISH ...THIS IS MINE...ADDED SAUCE ;) BOTH WER DELICIOUS...ENJOY

2 large boneless chicken breast, sliced 1/8-1/4"
2 large egg
1 large lemon, just using the juice
20 medium sage leaves
1 1/2 c flour
1 tsp salt
1/2 tsp blk pepper
1/2 tsp garlic powder
1/4 c olive oil, dividd
SAUCE
1/2 c white wine
1/2 c chicken broth
1 Tbsp butter

Steps:

  • 1. IN A PLATE COMBINE FLOUR WITH S n P AND GARLIC POWDER...IN A PIE PLATE (or similar) BEAT TOGETHER EGGS N JUICE FROM LEMON.
  • 2. HEAT 1/2 THE OLIVE OIL IN A LARGE PAN...NOW DIP ONE PIECE OF CHICKEN IN SEASOND FLOUR THEN DIP INTO LEMON/EGG MIXTURE.
  • 3. PLACE IN PAN N COOK FOR 3 MINUTES THEN FLIP N ADD 1/2 SAGE LEAVES N COOK AN ADDTNL 3 MIN THEN REMOVE TO PLATTER...CONTINUE WITH REMAINN CHICKN ;)
  • 4. NOW ADD CHICKEN BROTH N WINE TO PAN N COOK FOR ABOUT 5 MINUTES OR UNTIL REDUCED A BIT...TURN OFF HEAT N ADD BUTTER.
  • 5. POUR OVER CHICKEN N SERVE IMMEDIATELY...ENJOY :)
