How to make Janet's Amish-Inspired Eclair Pudding

Number Of Ingredients 9

3/4 box (1 lb.) graham crackers
1 package (small) instant chocolate pudding
1 package (small) instant vanilla pudding
2 cups milk (divided)
1 (8-ounce) cartons whipped topping
For the Frosting:
1/4 cup butter, melted
2 tablespoon cocoa
powdered sugar

Steps:

  • Line a 13 x 9-inch pan with graham crackers (leave whole). Set aside.
  • In two separate bowls, mix chocolate and vanilla pudding with one cup milk each. Let puddings stand to thicken.
  • Fold a carton of whipped topping into each bowl.
  • Spoon chocolate pudding on top of crackers in pan, then top with an additional layer of crackers. Spoon vanilla pudding on top and add a final layer of crackers.
  • Refrigerate for at least 1 hour.
  • For frosting, mix butter and cocoa; add enough powdered sugar to make it spreadable. Spread over top layer of graham crackers.
