Italian Sausage Soup image

This is out of a church cookbook we bought in August and we've made it 3 times already it is wonderful and very hearty.

Number Of Ingredients 15

1 lb ground italian sausage (mild
1 lg onion chopped
2 stalks celery chopped
2 med carrots chopped
8 cups chicken broth
1-(14oz) can diced tomatoes
1-(29oz) can tomato sauce
1 clove garlic crushed
1 Tbsp orengano
1/2 Tbsp dried rosemary
1/2 Tbsp basil
1/2 Tbsp thyme
1 bay leaf
1/3 c sugar
1 c orzo (rice shaped pasta

Steps:

  • 1. In stock pot cook sausage, carrots, onion and celery until sausage is cooked. Drain fat. Add all other ingredients except pasta. Cover and simmer 1 hour. After an hour add orzo and return to boiling reduce heat and simmer 1 hour,uncovered, stirring frequently. Serve with freshly grated parmesan cheese and crusty bread.
