ISRAELI VEGETABLE SALAD image

2 bell peppers, thinly sliced
4 Persian cucumbers, sliced
1/2 red onion, thinly sliced 1 pint cherry tomatoes, quartered
2-3 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
Salt and pepper, to taste

Steps:

  • 1. Add the bell peppers, cucumbers, onion, and tomatoes together in a medium bowl. Drizzle in the balsamic and olive oil and toss to coat. Add salt and pepper to taste. Place in the refrigerator for one hour before serving.
