ORZO WITH ROASTED TOMATO AND GOAT CHEESE. image

Number Of Ingredients 6

3 cups assorted grape and cherry tomatoes
2 tbl spoon EVOO, divided
1/2 tsp salt divided
6 oz orzo pasta(about 1 cup plus 1 tblspoon)
2 oz goat cheese, crumbled.
1 cup basil cut into thin shreds.

Steps:

  • 1. Preheat oven to 400 degrees. coat a baking sheet with cooking spray. 2. Toss the tomatoes with 1 tblspoon of the oil and 1/4tsp of the salt, spred on the baking sheet and bake until the tomatoes just begin to split, about 13 minutes. ( only some of them will split). Remove from the oven. 3.Meanwhile, cook the orzo according to the pkg directions. Drain and toss with remaining 1 tbl spoon oil and remaining 1/4 tsp salt and the goat cheese. Gently stir in tomatoes and basil. Serve warm or at room temp. Makes 6 side dish servings.
