IRISH POTATO CAKE image

Number Of Ingredients 12

Cream all of the following together. Add the 4 beaten egg yolks to mixture and mix well.
2 cups sugar
1 cup butter
1 heaping cup cooked Irish potatoes (mash through the strainer)
4 beaten egg yolks (reserve egg whites)
Sift together:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon allspice
1/2 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon nutmeg

Steps:

  • Add flour mixture alternately to creamed mixture with 1 cup milk and mix well. Add 1 square melted unsweetened chocolate, 1 teaspoon vanilla, 1-1/2 cups pecans. Beat 4 egg whites until stiff but moist. Fold into other mixture and bake in 3 layer pans, greased and floured. Bake at 350 degrees. Icing: 3 cups sifted powdered sugar 1 stick butter 2 tablespoons milk or cream 1 teaspoon vanilla Melt butter, mix with sugar and milk, beat until creamy. Ice cooled cake and sprinkle with pecans.
