Huckleberry Shrub image

A tart huckleberry drinking vinegar (you can try it with different berries) gives club soda some kick.

Yield 8-10 servings

Number Of Ingredients 6

6 ounces huckleberries (about 1 cup)
1 1/2 cups sugar
1 cup white wine vinegar
3 tablespoons shrub (plus more shrub if you like)
1 cup club soda
Ice

Steps:

  • Place 6 ounces huckleberries (about 1 cup) in a 1-quart. heatproof glass jar. Bring 1 1/2 cups sugar and 1 cup white wine vinegar to a boil in a small saucepan. Remove from heat; stir to dissolve sugar.
  • Pour over berries and mix with a fork, crushing berries gently to release more flavor. Seal jar and store in a cool dark place 4 days.
  • Strain shrub through a sieve lined with 3 layers of cheesecloth into a clean jar. Cover and chill, tasting shrub every week or so, until flavor mellows to your liking.
  • For each drink, combine 3 tablespoons shrub with 1 cup club soda in a glass filled with ice. Taste and add more shrub if you like.
  • Shrub can be made 6 months ahead. Keep chilled.
