This muffin smells like Heaven when it's baking! The sweet honey taste comes through and blends beautifully with the apple pieces. Soft and moist this is a great way to sneak some fiber in on the kids, and they'll love the sweet honey flavor!

Steps:
- 1. Preheat oven to 400 degrees F. Coat a muffin pan with nonstick spray (or line with paper liners.)
- 2. Crush cereal to fine in either a food processor or by hand with a rolling pin (put cereal in a ziploc first.)Place in a large bowl; add flour, baking soda, and salt. Blend well. Set aside.
- 3. In a separate large bowl, whisk egg and egg yolk until well blended but not frothy. Stir in brown sugar, honey and vanilla. Stir in yogurt until combined. Fold in cereal/flour mixture and apples just until combined.
- 4. Spoon batter into prepared muffin cups all the way to the top.
- 5. OPTIONAL TOPPING: Crush cereal just enough so it doesn't resemble a cereal anymore. Blend in butter well so it all begins to clump. If desired, mix together topping and place a little on each muffin pressing it in with your fingers.
- 6. Bake in preheated oven for 15-25 minutes (depends on size of muffin) or until a deep golden brown and toothpick tests done. Transfer to a wire rack to cool.
