Healthier Chicken Cordon Bleu image

Face it we all need to watch our weight from time to time. This is an excellent version of the traditional fattening Chicken Cordon Bleu. It is really delicious.

1 garlic clove crushed
2 Tbsp butter melted
1/3 c fat free chicken broth
1/2 c bread crumbs
2 Tbsp pamigiano-reggiano cheese( parmesan chees)
1 tsp paprika
4 boneless chicken breast halves
1/4 tsp salt
1/4 tsp oregano
1/4 tsp black pepper
4 thin slices of prosciutto ham
1/3-1/2 c reduced fat part skim mozzarella cheese
cooking spray

Steps:

  • 1. Heat oven to 350 degree's Put broth in microwave and heat for 30 seconds.Stir in butter and garlic set aside
  • 2. Combine bread crumbs,Parm cheese,and paprika in medium bowl,and set aside.
  • 3. place a chicken breast 1 at a time in a gallon size ziploc bag or between to sheets of plastic wrap and pound with mallet un 1/4 inch thick.
  • 4. Sprinkle all sides of chicken with salt,pepper,and oregano.Top each breast with the Prosciutto ham,and a 1/4 of the Mozzarella cheese.Roll up chicken pieces like a jelly roll.
  • 5. Dip the rolled up chicken in the broth mixture.Dredge in bread crumb mixture. Pour remaining broth over chicken. bake for 30 minutes,or until done
