HALIBUT WITH TOMATO, CAPERS, AND OLIVES image

Number Of Ingredients 12

for the Halibut
1 4 lb halibut fillet
1 tbs o oil
salt and pepper to taste
for the tomatoes
6 tbs o oil
6 cloves garlic minced
2 28oz can tomatoes
8 oz kalamata olives, halved
3 tbs basil chopped
3 tbs capers, rinsed
3/4 tsp red pepper flakes

Steps:

  • coat halibut wil oil and season with salt and pepper. Roast in 350 oven for 20-25 min. in 12 in skillet over med-low heat oil and add garlic. stir 1 min. Add tomatoes with any remaining puree, olives, capers, and red pepper. Bring sauce to brisk simmer and cook 8 min. stirring frequently. Spoon sauce over fish and garnish with basil.
