Number Of Ingredients 10

Baking spray
3 cups all-purpose flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
Grated zest and juice of one lemon, keep separate
12 ounces gumdrop candy, cut into 1/4 to 1/2-inch pieces (about 1 1/2 cups)
1 cup sugar
1/2 cup butter at room temperature
2 eggs at room temperature
1 cup milk at room temperature

Steps:

  • Preheat oven to 350 degrees. Spray two loaf pans. Whisk together the flour, salt, baking powder and lemon zest. Add the gumdrops and stir to separate all the pieces. In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, then slowly add the milk and lemon juice. Add the flour mixture and stir just until fully incorporated. Spread the mixture into the prepared pans and bake for about 50 minutes (check after 40) or until a toothpick comes out clean. Cool in the pans on a rack for about 10 minutes, then remove from pans and cool on the rack. Note: About 1/2 cup chopped walnuts and/or golden raisins can be added with the gumdrops. Note: Putting the gumdrop candy in the freezer for about 20 minutes will help with cutting.
