BAKED CHICKEN WITH PLUMS, GINGER AND SOY image

Number Of Ingredients 15

8 chicken breasts
4 TBS olive oil
1 onion, chopped
25g/1 oz butter
2 TBS lemon juice
1 TBS soy sauce
1 tsp ground ginger
1 TBS tomato puree
2 TBS brown sugar
1 tsp salt
350g/12oz plum jam
1 tsp dry mustard powder
dash of worchestershire sauce
1 garlic clove, crushed
6 fresh plums (stoned and quartered)

Steps:

  • Season chicken in salt and pepper Brown slightly in olive oil, remove from heat. Saute onion until soft. Add all remaining ingredients except fresh plums, simmer for 15 minutes. Place chicken in oven-proof dish, cover with sauce, scatter with plums. Bake in oven for 45 minutes on 350 degrees F.
