Steps:
- 1. Saute your onions, garlic & jalapeno till tender then add your mushrooms. Once the shrooms are tender add your chopped creamed spinach and cook till hot. Cook up your ham while making your eggs and while cooking in pan add some maple syrup.
- 2. Cook up your ham in another pan and add some maple syrup.
- 3. Meanwhile, take your eggs and whisk them in a bowl, add cottage cheese to eggs & then add to your mixture in the pan. Add capers, onion salt, & pepper. Cook till eggs are done.
- 4. Plate up your green eggs and ham. Feast away.
