Hawaiian Chicken image

This tastes like a dish you would get from a Chinese restaurant, sweet and sour chicken! I served this with a side of white rice. This recipe came from a food friend named Sday5 and its perfect! I added my photo!

4 large chicken cutlets-cut into bite sized pieces
2 large eggs
1/4 c flour
1/2 c corn oil
1/2 c green peppers-chopped
1/2 c red peppers-chopped
4 stalks celery-chopped
1/2 c pineapple juice
1/2 c pineapple chunks-canned
1/4 c chicken broth
SWEET AND SOUR SAUCE INGREDIENTS
3 Tbsp cornstrach
1/2 c red wine vinegar
1/2 c sugar
3 tsp soy sauce
1/2 c chicken broth
1 tsp kosher salt
1/4 tsp pepper

Steps:

  • 1. Beat together eggs and flour. Then dip chicken into this batter.
  • 2. Heat oil in skillet and fry chicken slowly. After all chicken pieces have been cooked, drain chicken onto paper towels and remove excess oil from pan.
  • 3. Add the peppers, celery and pineapple chunks to the pan. Then put the fried chicken pieces on top. Do not stir. Pour the pineapple juice and the 1/4 cup of broth, over this. Cover and simmer for 10-15 minutes.
  • 4. In a seperate small sauce pan, combine Sweet and Sour sauce ingredients. Cook until thick. Pour over the meat and vegetables just before serving.
  • 5. Serve with a side dish of white rice.
