GREEK PIZZA image

Yield 15-20 hors d'oeuvres

Number Of Ingredients 13

Pizza dough to fit a 10x15" pan
Oregano
4 tablespoons butter, melted
2 teaspoons garlic, minced
3 tablespoons olive oil
3/4 pound shrimp (about 20), shelled and deveined and halved lengthwise
11/2 tablespoons fresh lemon juice
1/2 pound Feta cheese
12 ounces low-fat cream cheese, at room temperature
1 green bell pepper, julienned
1/2 cup Kalamata olives, pitted and sliced
Cherry tomatoes, sliced thin crosswise
Grilled artichoke hearts (optional)

Steps:

  • Spread pizza dough on an oiled pan. Prick with fork and sprinkle oregano on top. Bake in preheated 425-degree oven for 5 to 7 minutes, or until crust begins to puff and turn golden. In a skillet, heat the oil over high heat and saute the shrimp, stirring, for 1 minute, or until they turn pink. Add 1 teaspoon minced garlic and saute for 15 seconds. Add the lemon juice and salt and pepper to taste and transfer to a bowl. (The shrimp may be cooked 1 day in advance, kept covered and chilled, and brought to room temperature.) In a food proecessor, blend the Feta and the cream cheese until the mixture is smooth. Spoon the cheese mixture onto the crust, spreading it evenly with a long metal spatula. Top the cheese mixture with the bell pepper, olives, tomatoes, artichoke hearts, and shrimp (which has been drained). Add 1 teaspoon minced garlic to the 4 tablespoons of melted butter, and drizzle over the top of the pizza. Bake the pizza in a preheated 400-degree oven for 10 minutes.
