Grandmas Dandelion Salad ( Lowenzahnsalat) image

One more from grandmas notes, we had this a lot in the summer months.

Number Of Ingredients 8

1 pound(s) young dandelions
4 slice(s) bacon (diced)
3 medium onions (finely chopped)
1 tablespoon(s) vinegar
1/2 teaspoon(s) salt
1 tablespoon(s) sugar
1 tablespoon(s) water
2 teaspoon(s) finley chopped herbs (she don't say what but i used parsley and some garlic)

Steps:

  • Remove blossoms from dandelions (save) grandma used the tops to make wine.
  • Cut stems and youngest leaves into small pieces and wash.
  • Fry bacon and onions, place in salad bowl together with dandelion leaves. (I did not drain all the grease from the bacon and onions left about 1 Tablespoon but did cool it a little before adding it to the dandelion.)
  • Combine vinegar, sugar,salt,water and herbs to make a salad dressing. Pour over salad and toss just before serving.
