Grandma Katherine's Lemon bars image

Grandma Katherine was a self taught cook. She often created her own recipes by taste. She loved tart and sweet!

Number Of Ingredients 10

CRUST
2 cup(s) all purpose flour
1/2 cup(s) confectioners' sugar
1 stick(s) butter
FILLING
4 - eggs
2/3 cup(s) lemon juice
2 cup(s) powdered sugar
2-3 teaspoon(s) fresh lemon zest
1 teaspoon(s) baking powder

Steps:

  • Cream three ingredients and place in bottom of a 9x13 pan.
  • Bake at 350 for 20 minutes or until golden coloring just begins.
  • Cream the remaining ingredients (all but baking powder) in mixer while crust is baking.
  • When crust is ready, add powder to mix. Mix.
  • Pour over crust and continue baking for an additional 25 minutes.
  • Once cooled, dust top with powder sugar. Enjoy!
