FROSTED CHOCOLATE MARSHMALLOW COOKIES

Number Of Ingredients 20

FOR THE BATTER :
1/2 c shortening
1 c sugar
1 egg
1 3/4 c sifted flour
1/2 c cocoa
1/2 tsp salt
1/2 tsp soda
1/2 c buttermilk
1 tsp vanilla
1/2 c chopped nuts
30 large marshmallows ; cut in half
chocolate frosting
FOR THE FROSTING :
2 c powdered sugar
1/4 c cocoa
3 Tbsp soft butter
1/4 c cream
1/2 tsp vanilla
dash(es) of salt

Steps:

1. Cream shortening and sugar , Beat in the egg. Sift dry ingredients ; Add to creamed mixture alternately with the buttermilk ; Stir in vanilla and nuts.
2. Drop by tablespoons onto a greased cookie sheet ; Bake @ 350° for 8 minutes.
3. Place a marshmallow half ( cut side down ) on top of each cookie and bake for 2-3 minutes longer.
4. Cool cookies on rack and then frost with chocolate frosting.
5. Mix chocolate frosting : Blend powdered sugar , cocoa , soft butter , cream , vanilla and a dash of salt until smooth.
