Frito Casserole image

This is a really easy, really delicious casserole.

1 can(s) (13 3/4 oz.) beef broth
1 can(s) (6 oz.) tomato paste
1 can(s) 4.5 oz. green chilis
1 pkg (1 1/4 oz.) taco seasoning
1 c uncooked rice
1 lb ground beef
1 small onion, chopped
1 can(s) (17 oz.) corn, drained
1 bag(s) (8 oz.) shredded colby or cheddar cheese
fritos corn chips

Steps:

  • 1. In a small bowl, blend 1 cup beef broth, tomato paste, green chilis and taco seasoning mix; set aside.
  • 2. In a small sauce pan, over high heat, combine leftover beef broth and enough water to equal 1 3/4 cup liquid; heat to a boil, add rice and cook according to package directions.
  • 3. In a large skillet over medium high heat, brown beef and cook onion until tender. pour off fat.
  • 4. In a 2 quart casserole, layer 1/2 each of the rice, corn, meat, sauce and cheese. Repeat layers. Cover with lightly crushed fritos and bake uncovered in a 350 degree oven for 40 minutes.
