FRESH ASPARAGUS GRIBICHE image

Number Of Ingredients 13

2 pounds fresh asparagus (blanched and chilled)
for the Dijon vinaigrette combine:
1 tablespoon Dijon mustard
1/4 cup red wine vinegar
3/4 cup olive oil
salt and pepper (to taste)
for the Gribiche combine:
6 hard boiled eggs (chopped)
1 red onion (diced)
3 tablespoons capers
1/2 bunch parsley (chopped)
2 tablespoonds Dijon Vinaigrette
salt and pepper (to taste)

Steps:

  • Divide the asparagus onto 4 chilled plates. Place a large spoonful of the Gribiche over the asparagus. Spoon additional Dijon Vinaigrette over the asparagus and serve. Simple.
