FRENCH ONION TARTLETS image

Yield 12 tarts

Number Of Ingredients 9

Olive oil cooking spray
12 very thin slices white bread, crust trimmed
2 T. butter
1 T. extra-virgin olive oil
2 lg. onions, very thinly sliced
1 bay leaf, fresh or dried
2 t. ground thyme or poultry seasoning
salt and pepper
1 lb. swiss or gruyere cheese, shredded

Steps:

  • Preheat oven to 350 degrees. Spray both sides of bread and press into small 12 c. muffin tin. Place bread in oven and toast until golden, 7-8 min. Remove and reserve. In a skillet, melt butter into oil. Add onions and bay leaf, season with thyme, salt & pepper. Cook onions until caramel colored, 15-18 min. Turn broiler on. Place spoonfuls of cooked onions in toasted bread cups. Discard bay leaf. Cover onions with cheese and set tarts under hot broiler to bubble and brown cheese. Serve hot.
