Fish Essentials: Parmesan-Crusted Salmon image

This recipe is prepared using a parchment-lined baking sheet, and that is pretty much it. This recipe was given to me from a friend who lives in San Francisco, and runs a catering business. We worked out the kinks in my test kitchen, and now it is one of the dishes that she makes for her clients. So, you ready... Let's get...

PLAN/PURCHASE
THE BROCCOLI
6 oz broccoli, just the crowns
2 Tbsp olive oil, extra virgin
1 clove garlic, minced
salt, kosher variety, to taste
black pepper, freshly ground, to taste
THE SALMON
1 medium salmon filet, skin on
1 tsp greek yogurt, plain variety
1 tsp lemon juice
1 clove garlic , minced
salt, kosher variety, to taste
white pepper, freshly ground, to taste
2 Tbsp parmesan romano, finely grated
1 tsp lemon zest
1 Tbsp olive oil, extra virgin
OPTIONAL ITEMS
freshly chopped parsley, for garnish

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. THE BROCCOLI
  • 4. Toss the broccoli crowns with the olive oil, and garlic, and then salt and pepper, to taste.
  • 5. THE SALMON
  • 6. Place a rack in the middle position, and preheat the oven to 400f (205c).
  • 7. Lay the salmon, skin-side down, on a parchment-lined baking sheet, and surround it with the broccoli.
  • 8. Combine the yogurt, lemon juice, salt, pepper, and garlic together in a small bowl, and then brush onto the salmon.
  • 9. Combine the parmesan, lemon zest, and olive oil together, and spread evenly over the top of the salmon.
  • 10. Place into the preheated oven, and cook until the salmon is flaky, and the cheese begins to brown, about 14 - 16 minutes.
  • 11. PLACE/PRESENT
  • 12. Serve the salmon with the broccoli, and sprinkle on a bit of parsley for garnish. Enjoy.
  • 13. Keep the faith, and keep cooking.
