FILETS WITH MUSHROOM SAUCE image

Number Of Ingredients 15

for steaks
2 filets
2 Tbsp fresh cracked black pepper
1 Tbsp Toni chacheris seasoning
1 Tbsp Emeril's essence
Olive Oil
Worstershire sauce
sauce
1 lb sliced shrooms
1 can beef broth
1 c red wine
1 shallot
2 Tbsp butter
2 Tbsp flour
salt & pepper

Steps:

  • rub olive oil over steaks. Mix dry ingredients and rub over steaks. add a few drops of worstershire to either side and let sit up to an hour before cooking. sauce sautee shallot, then shrooms add beef broth and wine and reduce to half the amount of liquid. in separate pan sautee butter & flour to create a medium brown roux. add liquid stirring constantly with a wisk, then add shrooms once liquid and roux are blended. grill the filets over high for 10 minutes for good med rare and top with the sauce
