FETTUCCINE WITH MASCARPONE, RICOTTA AND FRESH HERBS image

¾ lb. dry fettuccine
½ cup mascarpone cheese
½ cup ricotta cheese
1 scallion, chopped
1 Tbs. chopped fresh parsley
½ tsp. chopped fresh thyme, or 1 large pinch dried
1¼ tsp. salt
½ tsp. black pepper

Steps:

  • In a small bowl, combine the mascarpone, ricotta, scallion, parsley, thyme, salt and pepper. Cook fettuccine in boiling, salted water until just done. Drain. Return to the hot pot. Add the cheese mixture and stir until melted and smooth. Serve immediately.
